Virginia (Jenny) A. Giannotti Higbee, January 6, 1951 – January 18, 2024 Jenny was born to Nora and Estel Hopkins and had 3 siblings. Brothers Bob and Mike and sister Joyce. They lived in Missouri on a horse ranch. Her father was great with animals, and she learned from him that every animal is a friend and a pet. When she was in grade school they moved to San Fransico, California. This is when she fell in love with the ocean. She would spend many hours driving along the coast, walking along the water or surfing. At the end of High School, she took a trip across Europe with her good friend. They would go to a place and pick up some work to help pay for gas and food, stay for a few days then move on to the next place. She loved to travel. After Europe she came back to the United States and lived in Nevada where she met Richard Giannotti. She worked in the casino industry taking care of books and became an entertainment coordinator. They had their daughter Nicole and stayed in the Winnemucca, Nevada area until Nicole completed High School. She then moved to Idaho to stay close to her daughter and later her grandchildren Ryan and Brandon Beeson. She loved her family and made sure that she was there for support. She met Richie Higbee and began a new life with him. They traveled around the United States seeing sights while Rich worked in different job sites as a welder. Jenny had a very poor sense of direction and very often got lost. She always called these "going on an adventure" because she would find something that otherwise she would miss and always seemed to be able to get to the end destination. Jenny loved spending time with her grandkids. They always made her laugh and became her world. She took trips with them and got to watch both of them grow up to be great people. Jenny was a free spirit. She was always on the go planning for the next adventure. She hated to be in one place for to long. She knew the world was big and wanted to enjoy it all. You could always find her with a smile and if you spent 5 minutes with her, she knew your whole life story. Jenny is survived by her husband Rich Higbee, daughter Nicole (Kenny) Beeson, adopted daughter Tara (Adam) Eisenhauer and four grandchildren: Ryan and Brandon Beeson and Justin and Gage Massey. Memorial service will be announced at a later date to commence in Winnemucca Nevada.
